The Ham Carver
You have an acorn-fed Iberian ham on the stand and a queue of orders. Trim off the rind and the yellow fat, carve thin slices with long, level strokes and lay them on the plate in a circle, without overlapping. Three plates sent back or a nicked knife, and it's over.
Acorn-fed ham from the Sierra de Huelva, home of the Jabugo Protected Designation of Origin.
Drag the knife from side to side, just below the cut and without tilting, then tap the plate to lay the slice. With a keyboard: up and down for depth, left and right to move it and space to carve; then arrows and Enter to lay it. C, steel; G, turn; S, serve; R, into the trimmings; M, the fly.
